Green paprika in vinegar

Wash the papricas,prod more places at the spears.Put it in bottles and beetween of the papricas,a few spears horseradish.Mix with pepper,weaken vinegar,sugar,bay leaves and boil it.If the juice is cool,pour on the paprikas,that cover it.Day after close the bottles,if the juice subside,compensate with vinegar.


Paprika salad

5 kg paprika need:2 dl vinegar,2 spoonful salt,4-5 bay leaves,10-15 peppers,10 dkg sugar.

Cut onto rings the preserving paprikas.Take apart the green one's,apart the red's.Pour on hot weaken vinegar,let to stand in to a few minutes,then drop on a sieve.Put in bottles into apart layers of the green and red paprica rings.Make weaken vinegar with salt,pepper,sugar,boil it,then let to cool.Pour onto the paprikas,close the bottles,and steam out.


Delicacy paprika

2-3 kg meaty green paprika,2 liter water,4 dl 10% vinegar,1 spear horseradish,1-1 spoonful pepper,mustard seeds,coriander seeds,allspices,5 dkg salt,25 dkg sugar,2 pinches preservative.

Boil the water with vinegar,salt,sugar and spices to 5 minutes,then let to cool.If it lukewarm dissolve the preservative in.Cut onto half tha paprikas,take out the houses of the seeds.Put in a 3 liter bottle a spear horseradish and tha paprikas.Pour on the cool pickle juice and shake the bottle,thet the air get out.Close it and store in cell.

 

Drying paprika

Pick over at spears the washing paprikas,and thread onto a string.Hang it airy place and it ready in a few days.This drying paprika may flavor stews,fish soups.


Paprika chilling

The complete papricas pre-boil to 2 minutes,the slices to 1 minute.Chill it in cool water,let to drop,then pack in plastic cods hermeticaly and chill.
