Marrow in steam
Peel and take out the seeds of the marrow,then pare it and le to dry to a short time.Put in bottles and in middle place a loop dills.Boil a liter water with 2 dkg salt,and let to cool it.Pour on the juice onto marrow,throw on the top a pinch preservative,close and steam it to 10 minutes.
Spicy marrow
Cut the peeled marrow onto 2 cm pieces,salt and let to stand to a day.Day after add to 1 liter water,1 dl vinegar,2 head onion,a few pieces pepper,a bay leaf and the juice of the marrow.Boil it ,and if it cool,pour on the marrow.(During the marrow get in bottles).Place beetween the marrow a few spears horseradish,cover the bottles and keep it on cool place.Pour down the juice in a week,add to a few mustard seeds,boil,and if it cool pour back onto marrow.Clos the bottles and store in cell.
Marrow jam
1 kg vegetable marrow,10 dkg sugar,juice and rasp hull of 1/2 lemon.
Peel and clean the marrow,cut it onto 4 parts.Mix the sugar with the marrow,lemon juice and hull and let to stand to a day.Day after pour down the juice of,and boil it.If it begin to thick add the marrow to,and boil to thick,clear jam.Put it in bottles,close and steam out.
Marrow chilling
Pare the marrow,put to dry in a tray.Put it in plastic cods,close it hermetically and put in freezer.May flavour with dill,or green paprikas,tomatoes.
