Cucumber
Cucumber with dill
Use little size cucumber.Wash it and let to drop,put in bottles with dill,bay leaves,horseradish strips.Throw on the top a little mustard seeds,pepper and a pinch preservative.Boil weaken vinegar,mix it with 5 dkg salt,3-4 spoonfuls sugar,0.5 dkg alum,and pour hot onto cucumbers.Pour down the juice in 15 minutes,boil once more,and pour onto vegetables.Close and put in dry fume to a day.
Cucumber with mustard seeds
Peel the bigger cucumber and cut onto 4 parts.Put in a tray and throw on salt.Let to stand to 24 hours,then scratch onto dry.Boil weaken vineager and pour onto cucumber,let to stand to a day.During put the cucumbers in bottles,throw on a pinch preservative,and a coffespoonful mustard seeds.Boil the vinegar juice with pepper,cloves and horseradish strips,let to cool.Pour onto cucumber,close the bottles.Don't need to steam out.
Delicacy cucumber
To 4 kg fresh little cucumber need:3 liter water,5-6 dl 10% vinegar,4-5 dkg salt,25-30 dkg sugar,1 spear horseradish,mustard seeds,pepper,allspices,bay leaves,coriander seeds,4-5 pinches preservative.
Wash the cucumbers,let to drop of the water,put in bottles.Place between the cucumber a few strips horseradish.Boil the water with vinegar,salt,sugar and spices to 5 minutes,then chill itMix the preservetive to juice,if it is lukewarm.Pour on the cucumbers the cool juice close with double foil pack and put in the cell.If you want may steam it.Do same method,then the cucumber with dill.
Cucumber salad
1 kg peppino,1 middle onion,2 meaty green paprika,1 spear horseradish,pepper,1 coffeespoonful mustard seeds,coriander seeds,1 pinch caraway seeds,salt,sugar,vinegar,2 pinches preservative.
Wash the cucumbers and pare it without peel.Take out of the paprikas the houses of seeds and cut onto thin rings.Cut onto thin rings the onion too.Mix it,add salt to,and let to stand to 5 hours.During boil water with vinegar,sugar and the spices to 5 minutes,then chill it.When lukewarm mix to the preservative.Drop the salad over a sieve,press fine it and put in bottles.(Place on the bottom of the bottles horseradish strip)Pour on the spicy juice and close hermetically.
Fermentel cucumber to winter
Use cucumbers with middle size.Wash,it cut down the two end of the vegetables.Prod with a fork the cucumbers and put onto a tray.Place on the bottom of the bottles dills.Boil water with salt, (add to every liter to 3 dkg salt)and carafully pour onto the cucumbers.Put the bottles in lukewarm place (no direct sunlight or oven).It will be mellow in 10 days.Listen,that don't be cool the juice at night neither.
