Melon

 

Water melon in sugar syrup

Only the melon with thick hull is available to packing.Take down the green hull,that ap.1cm thick of the red meat keep on.Cut the hull onto 1cm wide pieces,and boil like to glassy.Let to drop over a sieve and boil syrup of same amount sugar as the melon hull and a little amount water.Take down the foam and put the melon hulls to and boil to 20 minutes.Let to relax to a day.Filter the syrup about the fruit and the juice boil to honeyed density,flavour with a vanilla piece.Fill the ingredients in bottles,close it and put in dry steam.


Melon preserve

1 kg melon,10 dkg sugar,1 lemon or 2 spoonful vinegar,1 pinch preservative.

The melon dont'be very mellow.Peel the melon on thinly,take out the seeds,and cut the melon onto slices.Boil the melon slices in water with vinegar or lemon slowly,then put in cool water,and at last let to drop.Pour on sugar syrup (2.5 dl water,10 dkg sugar),that it cover the fruits and boil.Let to relax to a day in cool place.Put the slices in a sieve and boil slowly the syrup to 10-12 minutes.Let to cool the syrup,take back the melon and once more let to relax to a day.At third day boil to a few minutes the juice with the melon slices,anf if it cool put in bottles,close.


Melon with rum

1 kg melon,8 dkg sugar,2 dl water,1/2 dl rum.

Clean,peel the melon,take out the seeds and cut the meat onto 10 cm length and 2 cm width pieces.Boil thick syrup of the sugar and the water,take away the foam.Pour on the rum and if the juice boil add the melon slices to.Boil to glassy of the melon.Don't mix with spoon the content,only shake the pot.Put on a sieve the fruits,filter and boil to thick once more the juice.Pour this syrup onto fruits and let to relax to day.Day after do it once more and when it cool pour in bottles and close.

 

Melon jam

Peel the melon,take out the seeds and rasp the meat.Add to every kilogram fruit 0.5 kg sugar and boil it -during constantly mix - to foam.Pour into a bowl and mix the content,then the foam disappear.Add 2 juice of lemon to and pour back into the cooking pot boil to 15-20 minutes.Pour hot in bottles,if it cool close hermetically and steam in fume to 20-25 minutes.


Melon in vinegar

Pour on 1 kg sugar to half liter water,3 dl wine vinegar,3-4 pieces cloves,a piece cinnamon and during mix,boil to a few minutes.Add onto cubes cutting hull of melon,that the syrup cover it.Boil the content to 2-3 minutes,mix it,and take on of the cooker,let to relax to a day.Take out the hulls and put in bottles,the juice boil to ap. 10 minutes.At last pour the juice onto hull.Let to cool it,close and steam to 10 minutes.Let to cool in the water.

The melon isn't available for chilling,because on account of the high water content,after the thaw break up.
