Apricot
Apricot preserve
Use almost mellow fruits.Boil the apricots in weak vinegar water to 2-3 minutes.Flush it with cool water and put in bottles.To 1 kg apricots need: 80 dkg sugar,4 dl water and a piece vanilla.Boil this ingredients and pour hot onto fruits.Day after pour on the syrup,boil once more,and pour the apricots.Throw on the top a pinch preservative,close hermetically,steam to 10 minutes.
Drunken apricot
To 1 kg apricot need:10 dkg sugar,1/2 dl rum or cognac,1 pinch preservative.
Wash the mellow fruits,rub with a cloth,prod with a needle on more places.Boil syrup of 10 dkg sugar and a little amount water,put the fruits in,boil on.Take out carefully the apricot ,put in a bowl.Day after boil to thick the syrup,add the rum to,at last pour onto fruits it.Close and steam out.
Apricot in sugar.
Use almost mellow fruits.Peel it,put in bottle.Put on every row ap. 0.5 cm thick,on the top ap. 1 cm sugar.Throw on 1 pinch preservative,close and keep in cool place.
Apricot jam
To 4 kg apricots need:2 kg sugar,4 pinches preservative.
Use very mellow fruits.Wash it,and put in a pot.Throw on every row sugar and let to stand with cover in a cool place to a day.Day after mix it continously and boil to 15 minutes.Mix the preservetive to and fill hot in bottles.Close and steam to 20 minutes.Let to cool in the pot.
Apricot jam 2.
1 kg peeled apricot need 15 dkg sugar.
Put the fruits in boiled water onto a short time.Take out,pick on the hulls,take out the seeds.Boil syrup of the sugar and water.Put the apricots to,and boil on to disappearance of foam.Fill it hot in bottles,let to cool and close.Steam to 10 minutes.
Apricot sauce
1 kg apricot need 10 dkg sugar,1 pinch preservative.
Breake on a sive the peeled,washed fruits.Mix it with 10 dkg sugar to thaw of sugar.Fill it into little bottles,and throw on the top a little preservative.Close,steam out it.
Apricot cheese
Boil 1 kg apricot to scaling of the hull,then breake over a sieve.Mix 60 dkg sugar to,mix it and boil to thick.Ready if the drop syrup soon jell.Fill it water greasing form to chill,then turn out and dry.
Drying apricot
Need to almost mellow fruits.Put to a short time on hot water the pieces,peel it,take out the seeds and put onto a tray(cutting side on the top) and warm place.Rotate the pieces often and in 48 hours,the fruits may put out onto direct sunlight to 48 hours.Check the fruits:one pieces cut half,and if the inside is good drying too,put in paper boxes in the cell.At oven start the drying at 35-40 C degrees,and increase this temperature onto 45-50 C degrees.In this case need to 42-60 hours to drying.
